Lemon Poppyseed Muffins

Earlier this spring I had ordered one pound of Poppyseeds from https://www.olivenation.com/whole-black-poppy-seeds.html , for a graduation order I had that fell through.  With a pound of poppyseeds now on my hands I've been researching different ways to use them.  The first recipe I wanted to try is a classic but with a twist using DoTerra Certified Pure Therapeutic Grade Lemon Essential Oil.  Doterra Certified Pure Therapeutic Grade Essential Oils can be purchased here http://mydoterra.com/karenpeterson35, "These statements have not been evaluated by the Food and Drug Administration". Lemon Poppyseed Muffins

Ingredients:

1 2/3 cup granulated white sugar

20 drops DoTerra CPTG Lemon Essential Oil

Zest of 1 lemon

½-3/4 cup fresh squeezed lemon juice

1 cup whole milk, room temp

4 cups all-purpose flour

1 tbsp + 1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 ½ cups sour cream

4 large eggs, room temp

1 tbsp pure vanilla extract

2 sticks unsalted butter, melted

3 tbsp quality poppy seeds

 Directions:

 

  1. Preheat oven to 375°.
  2. In a large bowl mix DoTerra Lemon Essential Oil with a whisk into granulated white sugar. Sift the flour, baking powder, baking soda & salt over the sugar.  In another small bowl, whisk together sour cream, eggs, vanilla, fresh lemon juice & melted butter together until combined.
  3. Add the wet ingredients to the dry ingredients and slowly mix together until just combined. Add the milk to the dry ingredients after all the other wet ingredients have been added, then stir in poppy seeds gently with a wooden spoon.
  4. Using a spring loaded scoop fill muffin liners 2/3 full or about 3 tablespoons. 
  5. Bake muffins at 375° for 18-22 minutes or until a toothpick inserted comes out clean.

 Topping:

 Mix ½ cup of granulated white sugar with 8-10 drops of DoTerra CPTG Lemon Essential oil with a spoon.  Sprinkle ½ tsp on top of each muffin before baking.

Sidenote: if you want your lemon poppyseed muffins to look more yellow you may have to add some yellow food coloring. I like the look of them without the addition of food coloring.
